shutterstock_351777131According to a recent episode of  “Chopped”, foods like asparagus, steak and oysters symbolize love. And, what better way to show your love than to prepare a delicious Valentine’s Day meal at home for the one who holds your heart? Chef Alyn shares his version of Black & Blue Steak topped with Bodacious Olive Espresso Balsamic and creamy Asher Blue Cheese from our Cheese Counter at So Gourmet.  In his opinion, this technique works best with a filet or a ribeye steak. However, if you prefer a NY Strip, that will work, as well.  

Ingredients:

1 Ribeye or Filet Steak

Salt & Pepper

Bodacious Olive Espresso Balsamic Vinegar

Asher Blue Cheese crumbles

Directions:

Use a cast iron skillet and get it as hot as you can on your cooktop. Make sure your exhaust fan is on, too! Do not use any oil or butter in your pan. Pat the steak dry and then season with salt and pepper on both sides.  Add your steak to the hot skillet, and, depending on the thickness of your steak, sear for 1 to 2 minutes per side. For a 11/2 to 2 inch filet, the center of your steak will still be very rare. For increased doneness, remove your steak from the hot skillet so it doesn’t continue to sear, and place in another pan. Put the steak in a 400 degree oven for 4 to 5 minutes.  Your steak should be cooked to medium to medium rare at this point.  Plate your steak and top with a drizzle of Bodacious Olive Espresso Balsamic and crumbles of Asher Blue Cheese. Say “I love you” and enjoy!
